Balsamic Pork Scallopine Recipe

Ingredients

  • 3 pounds pork sirloin cutlets
  • 1-1/2 cups all-purpose flour
  • 1/2 cup olive oil
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1/2 cup chopped roasted sweet red peppers
  • 6 garlic cloves, minced
  • 1 can (14-1/2 ounces) reduced-sodium chicken broth
  • 1/2 cup minced fresh basil or 2 tablespoons dried basil
  • 1/2 cup balsamic vinegar
  • 1/2 teaspoon pepper
  • NOODLES:
  • 1 package (16 ounces) egg noodles
  • 1/2 cup half-and-half cream
  • 1/4 cup grated Romano cheese
  • 1/4 cup butter, cubed
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder

Directions

  • Dredge pork cutlets in flour. Heat oil and butter in a large skillet over medium-high heat; add pork and brown in batches. Set aside.
  • Add onion and red peppers to the pan; saute until onion is tender. Add garlic; cook 1 minute longer. Add the broth, basil, vinegar and pepper. Return pork to the pan, layering if necessary.
  • Cover and cook over low heat for 15-20 minutes or meat is tender.
  • Meanwhile, in a Dutch oven, cook noodles according to package directions. Drain; stir in the cream, cheese, butter, pepper and garlic powder. Serve with pork. Yield: 12 servings.

Nutritional Facts 3 ounces cooked pork with 3/4 cup noodles and 2 tablespoons sauce equals 533 calories, 25 g fat (9 g saturated fat), 122 mg cholesterol, 280 mg sodium, 43 g carbohydrate, 2 g fiber, 32 g protein.

love this recipe. I like to double the amount of half and half and romano cheese and use about 3/4 stick of marg. Also used a 7 oz jar of roasted peppers - so it wouldn't go to waste.

This is one of my families favorite dinners. If you're looking for more veggies, we sometimes add peas in with the noodles and then put the pork on top.

I was looking for something that would be less time and effort consuming than the stir fry I had planned. This was easier. I substituted a fresh green pepper and wine vinegar. Everyone enjoyed it with applesauce and green beans.

I sliced up a pork tenderloin roast and used instead, also only 8 oz of noodles but the same amount of cheese - and my family loved it - great!

This recipe is delicious, however the only thing I will change the next time I make this dish is to cut down on the amount of balsamic vinegar. I will also double the sauce next time, we like using the saucer as "gravy" on the noodles.

This recipe is delicious, I made it awhile back and I was just thinking about making it again! But, I will

definitely not add as much balsamic vinegar, just aliitle to much for MY taste! I will also double the sauce this time as we enjoyed the sauce so much we used it as "gravy" on the noodles! This recipe is a keeper.

This was amazing. I made it with chicken because it was already defrosted but I had all of the ingredients and it's now a family favorite! We'll make again and again.

did not have balsamic vinegar on had but did have balsamic vinegerette dressing. Even a 7 and 4 year old like it!

I made this dish the other night, it was a BIG hit. While cooking the whole house smelled great! A very flavorful dish, although the balsamic was a little over powering for my taste but I will simply adjust it down the next time. The noodles were fantastic too and complimented the balsamic dish very well. The noodle dish was as simple to make as boxed man n cheese without the box, the kids loved it too. This recipe has become a part of my menu arsenal, its very nice to have many choices when trying to decide what to cook for dinner.

BTW, I trimmed all the fat and pounded the pork to about a 1/4 inch, this made it extemely tender. I bet this dish would taste well using chicken tenderloins too. Can't wait to try that one.

If you like balsamic you'll absolutely love this dish.

Oh my gosh - this dish is absolutely delicious!! The pork smells wonderful while cooking and tastes even better! I only used 1 T of dried basil as we think it can overpower a dish. The noodles are delicious also. Will be making this often.

This was excellent.. although I didn't put in all the Basil. I just used a couple teaspoons. But, the kids loved it and my husband was eating seconds.

the balsamic over powered all other flavors except maybe the roasted red peppers, which were very good. The Pork was nearly tasteless. I also adjusted the garlic from 6 cloves to 4. Six cloves?! Yikes, I like garlic but with 4 it was plenty for me. I would like to try this with further adjustments with veal and using veal stock instead of chicken. The noodles were uninspiring.

These are a good switch from what we regularly make, so that is nice. We have made twice now, and everyone eats them without complaining, but no special compliments either. The noodles on the other hand are a huge hit. We make them with NO YOLKS dumplings (really just extra wide egg noodles) and everyone loves them. We have saved the noodles as a recipe on their own as they would be great with veal scallopine, thin saute chicken breast cutlets, ham steak etc. The NO YOLKS are light and with the sauce make a great light accompaniment. To make them even lighter, we use either half 1/2 and 1/2/ and half milk, or all whole milk. Either way they are very good. But do use the butter in the noodles. . .while we like to eat healthy, the butter makes all of the difference in the noodles.

I made this recipe last night, and it was absolutely delicious! The sauce was super flavorful and the whole house smelled so yummy. I made mine with turkey cutlets, which tasted fabulous. The only thing I didn't like was the noodles. However, I used the whole wheat version and they were too "sturdy" for my taste. If I would have used regular egg noodles, I'm certain it would have turned out better. Would definitely recommend this recipe!!

i have two recipes with pork and balsamic glaze. I made this one first because I had all the ingredients in my pantry. After making this, I threw the other recipe away. This is amazing!! I used penne pasta instead of noodles due to personal preference, other than that I made it exactly to the recipe. It was a huge hit and will definitely become part of our menu!! Can't wait to serve it to my married children!
