Balsamic Green Beans with Almonds Recipe

Ingredients

  • 1/4 teaspoons salt
  • 4 ounces fresh green beans
  • 1 cup olive oil
  • 1 medium shallot or 1/3 cup chopped onion and 1 chopped garlic clove
  • 1-1/2 tablespoons balsamic vinegar
  • 1 tablespoon sliced almonds

Directions

  • Wash and trim beans. Remove skin from shallot and chop finely.
  • In medium covered saucepan, bring water and salt to boil. Cook beans, uncovered, for 3 minutes or until tender. Drain and rinse under cold water.
  • In empty saucepan, over medium high, heat 1 teaspoon olive oil. Add shallots and cook 3 minutes, stirring often. Add green beans and cook for 2 minutes, stirring often.
  • Add vinegar and cook for 30 seconds, stirring to coat.
  • Transfer to serving bowl. Sprinkle with almonds.

recipes calls for 1 cup olive oil, is this correct? I doubt it.
