Balsamic Carrots Recipe

Ingredients

  • 1 lb fresh carrots, peeled and sliced diagonally
  • 1 cup cold water
  • 2 tablespoons balsamic vinegar
  • 1/2 ounces honey
  • 1 teaspoon olive oil
  • 1/2 teaspoons dijon mustard
  • 1 teaspoon dried basil
  • 1/8 teaspoons black pepper

Directions

  • In large saucepan, bring water to a boil. Add carrots, cover, reduce heat, and simmer 10 minutes or until tender.
  • Drain carrots and return to saucepan.
  • In small bowl, whisk vinegar, honey, olive oil, dijon mustard, basil, and black pepper.
  • Add dressing to carrots. Cook over medium heat 2 minutes, stirring often.
  • Serve warm.

Nutritional Facts 1 serving equals 47 calories, 1 g fat (trace saturated fat), 67 mg sodium, 9 g carbohydrate, 1 g protein. Diabetic exchanges: 1-1/4 vegetable, 1/4 fat.

I added a little corn starch to thicken. It covered the carrots nicely. It took much longer to cook the carrots than the 10 minutes stated.

Of course I knew I would love this recipe because I LOVE balsamic vinegar. This receipe is good. I took the advice of the first reviewer and thickened up the sauce so it coated the carrots instead of just a thin liquid. Super quick and tasty!

Super easy. I will thicken up the dressing next time, so it'll coat the carrots.
