Balsamic Beet Puree Recipe

Ingredients

  • 3 lb fresh whole beets, cleaned
  • 1 small white onion, peeled and cut into quarters
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon unsalted butter, cut into 4 pieces
  • Pinch freshly ground black pepper, to taste
  • Pinch salt, to taste, optional
  • Pinch grated orange peel for garnish

Directions

  • Preheat oven to 400°F.
  • Wrap beets in aluminum foil and place in shallow roasting pan.
  • Roast until tender when pricked with knife, about 30 to 40 minutes.
  • Allow to cool before removing skins, approximately 10 minutes.
  • Transfer beets to food processor, add onion and balsamic vinegar and process to smooth puree.
  • Place beet puree in heavy saucepan and add butter. Gently reheat over low.
  • Add pepper to taste and salt, if desired.
