Baker's Dozen Yeast Rolls Recipe

Ingredients

  • 2 to 2-1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 package (1/4 ounce) quick-rise yeast
  • 1/2 teaspoon salt
  • 3/4 cup warm water (120° to 130°)
  • 2 tablespoons plus 4 teaspoons butter, melted, divided
  • 3/4 cup shredded sharp cheddar cheese
  • 2 teaspoons honey
  • 1/8 teaspoon garlic salt

Directions

  • In a large bowl, combine 1-1/2 cups flour, sugar, yeast and salt. Add water and 2 tablespoons butter; beat on medium speed for 3 minutes or until smooth. Stir in cheese and enough remaining flour to form a soft dough.
  • Turn onto a lightly floured surface; knead until smooth and elastic, about 4-6 minutes. Cover and let rest for 10 minutes. Divide into 13 pieces. Shape each into a ball. Place in a greased 9-in. round baking pan. Cover and let rise in a warm place until doubled, about 30 minutes.
  • Bake at 375° for 11-14 minutes or until lightly browned. Combine the honey, garlic salt and remaining butter; brush over rolls. Cool on a wire rack. Yield: 13 rolls.

Nutritional Facts 1 roll equals 131 calories, 5 g fat (3 g saturated fat), 15 mg cholesterol, 169 mg sodium, 18 g carbohydrate, 1 g fiber, 4 g protein. Diabetic Exchanges: 1 starch, 1 fat.

My husband and I call this recipe "death by rolls". Un believable! I make alot I mean alot of bread and rolls usually my own recipes. His is one I make exactly as written

Great recipe. I used by bread machine to mix, but next time I will not. I think the recipe is easier without it.

I had made these rolls previously and they didn't turn out, however, I tried them again today with much better results! They were quick (about 1 hour start to finish), tender, and light. I will be making them again!

I tried these rolls for the first time last night, using no cheese, garlic, or honey, as the rest of the meal contained lots of cheese and garlic. They turned out perfectly. I did brush on just the melted butter after baking. What a nice recipe to have --- no need to head to the market for fresh rolls at the last minute, as these can be ready so quickly.

These were wonderful. As others suggested, I mixed it in my bread machine. I did not utilize the cheddar cheese or the garlic since it did not fit with the other flavors in the menu. I used a scant 2 cups of bread machine flour and added a tablespoon of milk to the dough to reach the desired consistency. I followed the usual bread machine directions of liquids first and yeast last. It was such a hit, the kids suggested it should be a weekly feature at Sunday dinner.

I made these using the "dough" setting on my bread machine. Turned out great and the machine did all the work.
