Baked Potato Soup Recipe
  • Prep: 1 hour 20 min. Cook: 15 min.

Ingredients

  • 4 large baking potatoes (about 2-3/4 pounds)
  • 2/3 cup butter
  • 2/3 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 6 cups milk
  • 1 cup (8 ounces) sour cream
  • 1/4 cup thinly sliced green onions
  • 10 bacon strips, cooked and crumbled
  • 1 cup (4 ounces) shredded cheddar cheese

Directions

  • Bake potatoes at 350° for 65-75 minutes or until tender; cool completely. Peel and cube potatoes.
  • In a large saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; whisk in sour cream. Add potatoes and green onions. Garnish with bacon and cheese. Yield: 10 servings.

I made this soup to feed the 12 people in our office for lunch one day (doubled the recipe). It very quickly disappeared and I regularly have request to fix it over and over. I add garlic and onion powder for extra flavor.

This is the best potato soup I have ever made. We make this many times every winter and it please my kids and my parents.

This is a very thick and flavorful recipe and quite easy to make. I have made it twice. The first time I baked the potatoes in the oven and the second time in the microwave. Although both were quite good, the oven baked potatos did give this soup an added layer of flavor. The second time I used some of the bacon grease and brushed it on some day old french bread slices I had cubed and salted, peppered and added some crushed red pepper and baked at 400 degrees for about 15 min. to add as a garnish. This is a very tasty although calorie laden soup. Sometimes you just have to give in to the comfort you get from food!

This was so easy and first time out served to my BFFs for a lunch and what a hit. My husband wouldn't stop eating for two days!! This is a winner!

Very bland at first, but I added double the seasonings as suggested by another review. I also added garlic salt, black pepper, and chopped yellow onion. It was delicious after that!

This is a good basic recipe but WAAAAAY too bland as-is. I added about double of all the seasonings plus a bunch of other stuff like minced onion, garlic salt etc. and also added a cup of shredded cheddar as well. I think if I hadn't done that it would have been pretty much a bland white sauce with chunks of potato. But I will definitely make again just adding the extra seasonings. We do tend to like stuff more spicy than some so maybe it's fine as it is for those with more bland palates!
