Baked Orange Roughy Recipe

Ingredients

  • 1 tablespoon olive oil
  • 5 garlic cloves, coarsely chopped
  • 1 medium onion, cut in half and thinly sliced
  • 1 chopped green bell peppers
  • 1 medium red bell pepper, thinly sliced
  • 1 medium tomato, chopped
  • 3/4 teaspoons salt, to taste, optional
  • 36 ounces orange roughy fillet or other whitefish, 6 - 6 ounce fillets
  • Cooking spray
  • 1-1/2 ounces pitted calamata olives, chopped, equal to 1/4 cup

Directions

  • Preheat oven to 425°F.
  • In nonstick skillet over medium-high, heat oil and saute garlic, onion, green and red bell pepper 5 - 7 minutes, until onions are translucent.
  • Add tomato and salt, cook 2 additional minutes, stirring often.
  • Lightly coat 13-inch x 9-inch baking dish with cooking spray. Add fish, top with onion mixture and olives.
  • Bake 20 minutes or until fish flakes easily with fork.
