Baked Oatmeal Recipe

Ingredients

  • 3 cups quick-cooking oats
  • 1 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1 cup milk
  • 1/2 cup butter, melted
  • Additional milk

Directions

  • Preheat oven to 350°. In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. In another bowl, whisk eggs, milk and butter. Stir into oat mixture until blended.
  • Spoon into a greased 9-in. square baking pan. Bake 40-45 minutes or until set. Serve warm with milk. Yield: 9 servings.

We used peaches and blueberries only. Thought it was silly to reheat it served in milk, but it was a good suggestion.

Every since I found this recipe, I have eaten it for breakfast at least 4 times a week. I divide the oatmeal into 9 squares and freeze them. My favorite way is with blueberries, strawberries and warm milk, but it is delicious by itself. You are going to love it!

I'm gonna make it again and again

This came out well. I made a few adjustments. Cut the sugar from 1 to 1/2 cup. Instead of butter, I used 1/4 cup oil and then mashed up one ripe banana. I also used regular oats instead of quick cooking, because it's all I had, and it didn't seem to be a problem. Also used 1 cup light vanilla soy milk instead of regular milk.

Baked oatmeal is a family favorite. One alternative to this is to omit the cinnamon, cut the sugar to 2/3 c. and cut the butter to 3 T. After baking, serve warm with butter and maple syrup. Delicious!

I added 1/4 cup coconut, 1/4 cup Craisins and spread peanut butter on top when it was still warm. Also made it in 9x13 pan and set really well. Very good!

Cut sugar back to 2/3 c, and it was sweet enough. Added 1/2 tsp. maple extract and 1/2 tsp. vanilla extract. YUM! Second time I made it I switched 1/2 of the quick oats for rolled and added frozen blueberries. Even more YUM!!!

Delicious and moist, and the house smelled wonderful while it was baking. I even ate slices of it cold as a snack.
