Baked Carrots Recipe
  • Prep: 10 min. Bake: 1 hour
  • Yield: 6 Servings

Ingredients

  • 1 pound carrots, cut into sticks
  • 1 bunch green onions with tops, chopped
  • 1 cup chicken broth

Directions

  • Place the carrots and onions in an ungreased 1-qt. casserole; pour chicken broth over all. Cover and bake at 325° for 1 hour. Yield: 6 servings.

    Editor's Note: This dish may be placed in the oven along with the Old-Fashioned Swiss Steak during the last hour of baking.

Nutritional Facts 1 serving (3/4 cup) equals 41 calories, trace fat (trace saturated fat), 0 cholesterol, 185 mg sodium, 9 g carbohydrate, 3 g fiber, 1 g protein.

Love the flavor and simplicity! I added raw potato 'sticks' to stretch the carrots - and enjoyed the combination!
