Meet the Cook: Because it requires so little time to prepare and is such a great hit with men and children, this is a favorite of mine to make for brunches. Served with a green or fruit salad, hot muffins and croissants, it's excellent for an after-church Easter brunch. (At Christmas, I sprinkle on red and green peppers!) Finally an egg casserole that doesn't have bread in it. Very flavorful with the sour cream, cheese, crispy pieces of crumbled bacon and a little onion. Will definitely be making it again.

Now this is good and a bit different than the breakfast casserole everyone has a recipe for. Served this with fresh fruit and banana nut bread over the Christmas holidays.

WOW!!! THIS IS SOOOO GOOD! I MADE IT FOR OUR XMAS GET TOGETHER W/ MY DAUGHTER IN LAW AND FAMILY! I WILL DEFINITELY MAKE IT AGAIN!! & I USED THE RED & GREEN PEPPER THAT MADE IT LOOK VERY FESTIVE!!!

I made this for Christmas morning and everyone raved about how fluffy it was. Absolutely delicious. One tip, I would stir it really well about halway through and I needed to cook it about 10-15 minutes longer, plus I added the whole package of bacon.. Awesome!!

Very good and easy- I cut it down to half and baked in an 8x8 pan. Bonus that I had all the stuff on hand with the exception of bacon, I used bacon bits and it was still very tasty! Will use again
