Meet the Cook: Because it requires so little time to prepare and is such a great hit with men and children, this is a favorite of mine to make for brunches. Served with a green or fruit salad, hot muffins and croissants, it's excellent for an after-church Easter brunch. (At Christmas, I sprinkle on red and green peppers!) I made this casserole for Christmas morning. My family absolutely loved it! My husband keeps asking me when I'm going to make again. So simple to make and so tasty!

Now this is good and a bit different than the breakfast casserole everyone has a recipe for. Served this with fresh fruit and banana nut bread over the Christmas holidays.

WOW!!! THIS IS SOOOO GOOD! I MADE IT FOR OUR XMAS GET TOGETHER W/ MY DAUGHTER IN LAW AND FAMILY! I WILL DEFINITELY MAKE IT AGAIN!! & I USED THE RED & GREEN PEPPER THAT MADE IT LOOK VERY FESTIVE!!!

While this was easy to make, it was rather bland.

I made this for Christmas morning and everyone raved about how fluffy it was. Absolutely delicious. One tip, I would stir it really well about halway through and I needed to cook it about 10-15 minutes longer, plus I added the whole package of bacon.. Awesome!!

Very good and easy- I cut it down to half and baked in an 8x8 pan. Bonus that I had all the stuff on hand with the exception of bacon, I used bacon bits and it was still very tasty! Will use again
