Bacon Spinach Muffins

Ingredients
- 6 bacon strips, diced
- 1/2 cup butter, softened
- 2 tablespoons sugar
- 1 egg
- 1/2 cup sour cream
- 1/2 cup whole milk
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup crumbled feta cheese
- 1/4 cup finely chopped onion
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
Directions
- In a small skillet, cook bacon over medium heat until crisp. Remove

- and sugar until light and fluffy; beat in egg.
- Combine sour cream and milk. Combine the flour, baking powder, baking
- soda and salt; add to creamed mixture alternately with the sour
