Bacon Potato Salad Recipe

Ingredients

  • 4 cups cubed red potatoes
  • 1 cup chopped onion
  • 7 bacon strips, cooked and crumbled
  • 2 tablespoons minced fresh parsley
  • 1-1/3 cups mayonnaise
  • 3 tablespoons grated Parmesan cheese
  • 3 tablespoons prepared Hidden Valley® Ranch

  • 2 tablespoons prepared mustard
  • 4 teaspoons white vinegar
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain.
  • In a large bowl, combine the potatoes, onion, bacon and parsley. In a small bowl, combine the remaining ingredients. Pour over potato mixture; toss to coat. Refrigerate for 1 hour or until chilled. Yield: 8 servings.

Nutritional Facts 3/4 cup equals 398 calories, 35 g fat (6 g saturated fat), 22 mg cholesterol, 524 mg sodium, 15 g carbohydrate, 2 g fiber, 5 g protein.

Great potato salad but you can cut the sauce in half, especially if you double or more the potatoes.

I made this last weekend and thought it was very good. However, unless you like a really creamy potato salad, the mayonnaise could be cut back to 1 cup. I also thought the mustard was a bit high.

Mine came out a little too assertive on the taste. The vinegar was very strong next time I would say to use less.

My whole family really enjoyed this! My kids don't usually eat potato salad and both had seconds of this. It definitely makes a lot of dressing; I could have done with less, but my husband insists it was perfect!

Great salad I did add celery.yellow & green bell peppers also put in some sour cream and used honey mustard...this is a keeper thanks:)

The flavors of this potato salad really mellow if left in the fridge overnight--otherwise I find the mustard and ranch a little strong and unblended. Otherwise, fabulous.

This is one of the best potato salad recipes I have ever tried. The only thing I didn't like was the intense mustard taste so I halved the amount. It also makes a lot of dressing the way it is written so I also added some more potatoes to compensate. I have gotten rave reviews every time I have made it.

I surely will be making this again. With plenty of herbs in my garden I substituted the onions for fresh chives. I refrigerated the potatoes after boiling to cool. When I put the salad together I combined all the ingredients except the potatoes. While the potatoes were still cold from the fridge I cut them and folded them into the bowl. I served it immediately and it was a huge hit. It still tasted great the next day however I thought it was better served immediately. It is very pretty as well.

This has got to be the most amazing Potato Salad Recipe I have ever tasted. This recipe makes you say YUM...It is a creamy salad so you could add more potatoes or cut back the mao. I have served this twice and people just say YUM.... thanks for sharing something different for this summer

My family loved this. I substituted bacon bits for the 7 bacon strips. I only used a cup of mayo and it still made way too much dressing for my taste. Next time I will halve the dressing ingredients.
