Bacon Jack Chicken Recipe

Ingredients

  • 2 boneless skinless chicken breast halves (4 ounces each)
  • 1/4 teaspoon seasoned salt
  • 2 tablespoons butter
  • 3 bacon strips, halved
  • 1/4 cup sliced onion
  • 1/4 cup sliced fresh mushrooms
  • 3 ounces pepper Jack cheese, shredded
  • 1 tablespoon grated Parmesan cheese

Directions

  • Sprinkle chicken with seasoned salt. In a nonstick skillet, cook chicken in butter over medium heat for 5-6 minutes on each side or until a meat thermometer reads 170°; drain. Remove and keep warm.
  • In the same skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Saute onion and mushrooms in drippings. Return chicken to the pan. Top with bacon, onion, mushrooms and pepper Jack cheese.
  • Cover and let stand for 2-3 minutes or until cheese is melted. Sprinkle with Parmesan cheese. Yield: 2 servings.

Was really simple and really tasty. (I skipped the mushrooms on my portion) but my bf really loved it

A nice idea, but to salty. I have had a similar recipe where the chicken was seasoned with lemon-pepper rather than seasoning salt, but had no mushrooms. I liked the mushrooms so I think in future I'll combine the two.

Wow!! Yum, yum, yum. Not the most figure friendly recipe but as an occasional indulgence this is to die for! I like switching it up between pepper jack and swiss cheese and they both are equally good. Other than that I stick to the recipe and its incredible. Thanks for sharing!

Whenever I have pepper jack, chicken, and bacon, the boyfriend requests this ever since the first time I made it 3 years ago. It is referred to only as "the chicken dish" but everyone knows what we're talking about! Absolutely delicious! I sometimes add some chicken/turkey stock so that there is some gravy and eat it over mashed potatoes.
