Bacon-Cheese Topped Chicken Recipe
  • Prep: 40 min. + marinating Bake: 20 min.

Ingredients

  • 1/2 cup Dijon mustard
  • 1/2 cup honey
  • 4-1/2 teaspoons canola oil, divided
  • 1/2 teaspoon lemon juice
  • 4 boneless skinless chicken breast halves
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Dash paprika
  • 2 cups sliced fresh mushrooms
  • 2 tablespoons butter
  • 1 cup (4 ounces) shredded Monterey Jack cheese
  • 1 cup (4 ounces) shredded cheddar cheese
  • 8 Wright® Brand Bacon strips, partially cooked

  • 2 teaspoons minced fresh parsley

Directions

  • In a small bowl, combine the mustard, honey, 1-1/2 teaspoons oil and lemon juice. Pour 1/2 cup into a large resealable plastic bag; add the chicken. Seal the bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate the remaining marinade.
  • Drain and discard marinade from chicken. In a large skillet over medium heat, brown chicken in remaining oil on all sides. Sprinkle with salt, pepper and paprika. Transfer to a greased 11-in. x 7-in. baking dish.
  • In the same skillet, saute mushrooms in butter until tender. Spoon reserved marinade over chicken. Top with cheeses and mushrooms. Place bacon strips in a crisscross pattern over chicken.
  • Bake, uncovered, at 375° for 20-25 minutes or until a meat thermometer reads 170°. Sprinkle with parsley. Yield: 4 servings.

EXCELLANT!! My kids loved it, want me to make it again tomorrow night. Easy and fast to make. One of the best dishes I've made in a long time.

This recipie was pretty good. I can see why the reviewer below mentioned it being greasy though, it does seem to use alot of oil and fats. So to avoid that entirely, I just didn't make it with all of that oil. I only put 3/4 tsp. of oil in the marinade (which by the way I used 1/4. c. of honey and mustard each and had plenty) and I didn't use oil to brown the chicken (just put cooking spray in the pan and it came out fine), nor did I need to add butter to the mushroom mix (I cooked it in the remaining marinade in the pan from browning the chicken). I also added onions to the mushroom mixture like others suggested & I really liked it that way. Also, for the mustard I used spicy brown rather than dijon, which was awsome and actually tasted like honey mustard. I used 3/4C. of both cheeses rather than a whole cup. This really cut down the fat and tasted just as good. As much as I love honey mustard next time I make the recipie I plan on using BBQ sauce instead and grilling the chicken before baking.

Sauce was good, but the chicken was dry and greasy. Not a pleasing dish but it did sound good from reading the recipe. As for all the positive reviews. (What are you people thinking?)

Awsome, my family loves it. I did not have dijon mustard so I used regular mustard and I crumbled bacon over it instread of strips. The chicken is sooo tender.

Wonderful combination of flavors. First time making it so I didn't change a thing. Next time I might add onions with the mushrooms as others have suggested. The marinade is amazing especially after baking. Thanks for this go to recipe.

I make this over and over and my husband and 3 kids never get tired of it. I used two tablespoons of regular mustard instead because I didn't have the other kind and it was lot better that when I tried this dijon mustard. Even my kids said not to use dijon because by using less regular mustard, it was 100% better. The best chicken recipe ever!

Easy to make and tastes so good! I eliminate the mushrooms and parsley and I brown the chicken in about a tablespoon of leftover bacon grease. I've also used only cheddar cheese when I haven't had Monterey Jack on hand. It's still delicious!

This was the best recipie I have had in a long time! It tasted just like the Mt. Topper grilled chicken at Montana Mikes! I will be making this at least 2 times a month! :)

My family of picky eaters loves this recipe. I thought I would share another way of cooking it: I also grill it on the outside BBQ grill until done instead of browning it in a frying pan. I then place it in a baking dish and top it with the cheeses and the other remaining ingredients just until the cheeses are melted. I double the marinade so there will be extra for us to dip the chicken in.

What a great recipe! I sliced a Vidalia onion and sautéed it with the mushrooms in olive oil. To make it more “heart healthy” I skipped the bacon and used only 4 ounces of cheese, a blend of shredded mozzarella and asiago.

I've made this several times, and we love it, especially my husband. I agree with the others that this is very similar to Outback's Alice Springs Chicken. I've made it for special occasions (New Year's Eve) but also make it for ordinary occasions. (Tonight we're having it because we're snowed in in Ohio:-)

I made this for company and they loved it! they requested the recipe. Even the kids said that this was the best chicken they ever had. I made 1/2 of it without mushrooms, just in case they didn't like mushrooms. A great chicken recipe.

Very good recipe! My family loved it... I did the following: used chicken tenders (which had to bake for about 30 minutes), used 8 oz of fresh sliced mushrooms and 4 oz of the cheeses (It says 1 cup then 4 oz... 1 cup is 8 oz... very confusing). I also did not add paprika (I forgot to put it on) and did not use the leftover marinade later in the recipe. Next time I make it, I'm going to halve the marinade, and also halve the Dijon mustard (to get 1 oz).. we're not a very big mustard family and the Dijon was pretty prominent... But all in all, the chicken was VERY good. :)

It was the best, I used lime juice instead of lemon skipped the paprika and mushrooms and sprikled the bacon over the top, my family say I can make this again the neighbor boy that was at diner that night says to call him when we have it again!

super yummy! i did use my own italian/garlic marinade instead of the honey/dijon one though. and i tried the green onions on top, too! i chopped the bacon though and sprinkle it on top. i totally recommend this recipe to all!

My family LOVES this recipie! We make it at least once a month! Instead of parcly though, I add chopped green onions for a little extra! And I make double the marinade so that it has extra flavor!

This was the dest dish that I have made in a long time! It was a dish that I tried on a wim, and to my surprise it was fantastic. Even my kids loved it!! If kids like it that says it all.
