Bacon & Tomato Spaghetti Recipe

Ingredients

  • 8 ounces uncooked spaghetti
  • 1/2 pound thick-sliced bacon strips, chopped
  • 2 cups cherry tomatoes, halved
  • 3 cups fresh baby spinach
  • 1/4 cup balsamic vinaigrette
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Grated Parmesan cheese

Directions

  • Cook spaghetti according to package directions.
  • Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 2 tablespoons drippings. Saute tomatoes in drippings until tender. Drain spaghetti; stir into skillet. Add the spinach, bacon, vinaigrette, salt and pepper; heat through. Sprinkle with cheese. Yield: 4 servings.

Nutritional Facts 1-1/4 cups equals 409 calories, 18 g fat (5 g saturated fat), 21 mg cholesterol, 833 mg sodium, 49 g carbohydrate, 3 g fiber, 15 g protein.

I love this recipe. I did make a couple of substitutions. I used low sodium bacon and I used whole wheat pasta.

I never make the same meal twice. My sons and I give each recipe a thumbs up or thumbs down rating. This recipe got a thumbs up from myself and the boys. Very easy to make and had on hand all the ingredients. I hope others realize the difference between balsamic vinaigerette and balsamic vinegar;it doesn't seem like it based on the other reviews I read.

I substituted diced pepperoni slices for the bacon and just fried it a little. What an excellent, fresh Italian taste. I will definitely make it again.

I've reviewed this recipe before but decided that it warranted another 5-star review. This is absolutely delicious and so easy to make. The only thing I ever change is to add more Balsamic Vinaigrette dressing because it just adds so much flavor to the pasta. I noticed some of the reviews saying that they will cut back the vinegar - I just want to point out that the recipe calls for salad dressing, not straight up vinegar. This is an OUTSTANDING recipe for lunch or dinner! I highly recommend it!!

This was very good. I did add some fresh basil. I added some thin sliced ham and a bit less bacon. Makes a nice colorful presentation. Will make again.

I added 2 cloves of garlic to the simmering tomatoes. Also, I think I would cut back on the balsamic just a little. Very good!

Like a BLT in a pasta costume. Seriously good stuff. Next time I might slightly decrease the amount of balsamic vinegar... Will be making again soon!

Wonderful recipe. When I see so many reviews on a recipe but am unsure of it I am still willing to try it. This was so good. I am thinking of replacing normal spaghetti and putting this in its place. My 3 year old son did not care for it but no biggie. This was great!!!!

This is so good. I made it with a one pint container of cherry tomatoes and a 10 ounce bag of spinach. I did add a little of the pasta water to moisten the sauce since I drained the pasta too much.

Quite good and oh so easy and quick. Didn't have any fresh spinach, but did have frozen. Thawed and squeezed water out and it was good!

I have made this a couple of times and love it! I did make a couple of changes. I used A Taste of Thai vermicelli noodles (gluten free) instead of regular. I also made a vinagraitte using white balsamic vinegar, olive oil and a dried Italian herb mixture. I have made this with cherry tomatoes and regular tomatoes I cut up. I liked it both ways.. cutting regular size tomatoes takes less time than cutting the cherry tomatoes.

I really like this dish. Simple ingredients, easy & quick to assemble. And different from your everyday fare. It only loses 1 star because I could not entice any of my kids to eat it. They are not spinach fans, but I loved it and mama does the cooking around here!

okay-second time trying to get this in...nasty recipe.Guess we missed the boat because leftovers won't make it to lunch. Flat, boring and too many tomatoes. Garlic won't even help. Good thing only thing I had to buy was the spinach because it would have been a waste of money.Glad everyone else liked it..we will be deep sixing this recipe.

I guess I missed the boat on this one, because we thought it was AWFUL.It was flat, had no flavor and too many tomatoes--and we love tomatoes. I'm not sure even garlic would help this one. Thankfully the only thing I had to buy was the spinach. We'll be deep sixing this one.

Made this last night...only thing I did differently on the ingredients is add sauted onions (1/2 cup) and red pepper flakes. Very good dish and will make again soon and often.

This recipe, with a few changes, was a staple at our table when I was growing up.

My Mom used home canned tomatoes instead of cherry tomatoes, and omitted

the spinach. My sister, brother, and myself were thrilled when we got home from school and there was a big pot of "skitty" simmering on the stove. It was definitely a comfort food in our house!

This recipe was excellent! We decided to tweak it a little bit though. We added a little bit more bacon grease, two scrambled eggs, and 1/2 cup of mariana sauce. And we also used four cloves of garlic and penne pasta!!! I cannot wait to try the left overs tomorrow!!!!

We loved this and so easy and fast. I did make a couple changes. I added several chopped leaves of fresh basil and substituted thin ham slices for 1/2 the bacon. It is definately a Keeper.

So nice to see so many (25) positive reviews. Will make as soon as I can get my hands on some cherry tomatoes. To answer Toni51's question about type of pasta (I did use the internal system as well - by clicking on the name) - virually all shapes of pasta are made with the same ingredients - so use whatever shape you have or prefer. Shells and penne can trap more sauce. Choose a size that doesn't overwhelm the other ingredients. You could also use egg noodles as well. For some dishes I use the coloured/flavoured noodles, but I think this dish is colourful enough and is best with the plain pasta. Hope this helps.

Made this for dinner last night. I only used 4 oz. of bacon which was plenty for us. I made my own fat free balsamic

vinaigrette. When I make this again I will use a little more spinach. Because it has veggies, meat and pasta this was a one dish dinner for us.

This was totally awesome! I used a gluten free pasta and did not include salt and pepper, used low sodium bacon, home grown tomato. It was totally awesome! Will take it to the next potluck. I hesitate with bacon but this was terrific! Go for it!!

Great recipe. Very easy to make and it was delicious! Both my hubby and 13-yr-old son said for sure this is a keeper and to make again! I did add a few green onions to it as a personal preference and all I did for the balsamic dressing was used 2 parts EVOO to 1 part balsamic along with some minced garlic. This is a very forgiving recipe when it comes to adding more or less of an ingredient per personal taste. THANKS for sharing it!!

I made it fowwing recipe but did not care for taste of vinagrette. Made it a second time and used Low Calorie Italian Dressing. Taste was great and I served it cold with chicken for lunch.

A great recipe that can be dressed up by adding a can of drained, washed garbanzo beans and substituting arugula for the spinach....just a different twist.

Very delicious, and yet light summer fare. I didn't realize it said "vinaigrette" (and not "vinegar") until the last minute. I scrambled to throw together a balsamic dressing and it turned out wonderful.
