Very good but a little peppery. Will use less next time. Love the veggies mixed inside and the cheese on top. Such a nice change from the meat loaf recipes with the ketchup on top (which I don't like). Very impressed!

My new favorite meat loaf recipe...and I've tried quite a few!

My family seemed to like this more than I did--I thought the pepper overpowered the bacon a bit--and I had cut the pepper to 1 teaspoon! Also, I am not a fan of blue cheese, so I used feta. All in all, this is a nice variation on meatloaf, and I will probably make it again.
