Ingredients

  • 4 ounces uncooked multigrain linguine
  • 4 Wright® Brand Bacon strips, cut into 1-1/2-inch pieces

  • 1 plum tomato, cut into 1-inch pieces
  • 1 garlic clove, minced
  • 1-1/2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon minced fresh parsley

Directions

  • Cook linguine according to package directions. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 teaspoon drippings.
  • In the drippings, saute tomato and garlic for 1-2 minutes or until heated through. Stir in the bacon, lemon juice, salt and pepper.
  • Drain linguine; add to the skillet. Sprinkle with cheese and parsley; toss to coat. Yield: 2 servings.

Nutritional Facts 1-1/2 cups equals 302 calories, 10 g fat (3 g saturated fat), 20 mg cholesterol, 670 mg sodium, 45 g carbohydrate, 7 g fiber, 13 g protein.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

Enjoy this recipe with a medium-bodied red wine such as Chianti, Sangiovese, Malbec or Zinfandel.

The whole family loved this.....even the picky eater. The lemon juice really sets it off. I used regular linguine since that is what I had on hand. I also added a little chicken broth, it just seemed too dry for my husbands taste. We will defiantly have this again.
