Made this for my husband and I for lunch today and we both loved it. I added pepperoni crisped in the microwave, and croutons. Thought both additions gave it extra flavor and crunch. Easy, delicious meal, especially good for warm, summer days.

This is definitely better the day it is made; the dressing got absorbed by the second day, but I sprinkled some shredded Parmesan on top to give it some added flavor.

My whole family just loves this salad. I sprinkle parmesan cheese on top at the end. Great for a hot summer day.
