For just two of us, I thought first I'd cut the recipe down, then thought "hey, these will freeze well," so I made the whole batch. Instead of water, I used beef broth, and was happy with the results. I served them with mac n cheese and a simple salad. Easy dinner.

Definitely will make again. Very tasty and goes together quickly. One tip...make them more flat on top than round so the cheese stays on better.

The barbeque sauce was a nice change from using ketchup. I don't buy stuffing mix so I just used two homemade rolls that I tore into small pieces and added a few dashes of parsley, garlic powder, and sage. This recipe was very easy to throw together. It seemed a little wet so next time I'll use half the amount of water. I will be making this again since more than half of us liked it.

These were great! My 3 y/o son actually helped a little bit. They were so quick and easy to put together and get in the oven - absolutely perfect for a week night. My husband shies away from anything different so when he saw meatloaf in a muffin pan he was skeptical. He told me they were "ok" and that he prefers "regular" meatloaf. And then he ate four of these, so I would say he liked them just fine. These are definitely going into my regular weeknight dinner rotation.

These are super easy to do and taste great! They only need to be in the oven 18-20 min. and that is great at the end of a long day.

Very easy to make, and satisfies a hungry crowd. The individual portions make it easy to serve. This recipe could easily be doubled and some could be frozen for later use. Cook once, eat twice!
