Avocado and Tomato Spread Recipe

Ingredients

  • 1 cup plain nonfat yogurt
  • 1/2 medium avocado, peeled and mashed
  • 1 small tomato, seeded and chopped
  • 1 teaspoon grated lemon peel
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons chopped pine nuts
  • 2 tablespoons chopped fresh mint

Directions

  • Line a colander with 3 layers of cheesecloth or paper coffee filters and place over a bowl.
  • Add yogurt. Cover and refrigerate 4 - 6 hours, allowing yogurt to drain.
  • Throw out liquid and add avocado. Blend well.
  • Mix in the rest of the ingredients. Cover and refrigerate until chilled.

Nutritional Facts 1 serving equals 17 calories, 1 g fat (trace saturated fat), 12 mg sodium, 2 g carbohydrate, 1 g protein. Diabetic Exchange: Free food.
