Avocado Cottage Cheese Dip Recipe

Ingredients

  • 1 avocado
  • Pinch black pepper, to taste
  • 3/4 cup cottage cheese
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chopped scallions
  • 1 tablespoon seeded, minced jalapeno peppers
  • 2 garlic cloves, pressed
  • Pinch salt, to taste, optional

Directions

  • Slice avocado and scoop out flesh.
  • In food processor, combine avocado, cottage cheese, lime juice, scallions, jalapeno, and garlic. Puree until smooth.
  • Add salt and pepper to taste, serve immediately.

Nutritional Facts 1 serving equals 64 calories, 5 g fat (1 g saturated fat), 77 mg sodium, 4 g carbohydrate, 3 g protein. Diabetic Exchanges: 3/4 fat, 1/2 lean meat.
