Ingredients

  • 2 Wright® Brand Bacon strips, diced

  • 1/4 cup chopped onion
  • 1 medium red potato, cubed
  • 1 small carrot, halved lengthwise and thinly sliced
  • 1/2 cup water
  • 3/4 teaspoon chicken bouillon granules
  • 1 cup milk
  • 2/3 cup frozen corn
  • 1/8 teaspoon pepper
  • 2-1/2 teaspoons all-purpose flour
  • 2 tablespoons cold water
  • 3/4 cup shredded cheddar cheese

Directions

  • In a large saucepan, cook bacon over medium heat until crisp; remove to paper towels. Drain, reserving 1 teaspoon drippings. In the drippings, saute onion until tender. Add the potato, carrot, water and bouillon. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until the vegetables are almost tender.
  • Stir in the milk, corn and pepper. Cook 5 minutes longer. Combine the flour and cold water until smooth; gradually whisk into soup. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Sprinkle with bacon. Yield: 2 servings.

Nutritional Facts 1 serving (1 cup) equals 473 calories, 30 g fat (16 g saturated fat), 77 mg cholesterol, 810 mg sodium, 35 g carbohydrate, 4 g fiber, 19 g protein.

I made this last night and enjoyed it. The only change I made was to use celery instead of onions... I plan on making it again, was very easy.

we love this chowder. I multiply it by 4 and have leftovers, which makes the husband really happy. We also add some cayenne pepper for a bit of spice... Thanks for the recipe!

I quadruple the recipe and my husband and I enjoy it for a week. We love this soup! I usually add extra corn, a little cayenne pepper (to warm it up a tad) and a little more bouillon to add more flavor.

I have made this recipe 5 times now! We get together with my best friends mom every Halloween and do kind of like a soup exchange and we had 5 different soups and mine was the only one that had nothing left in it! My kids love it and they are definitely picky eaters it is amazing! Love it!

I loved this recipe. I just made it for my boyfriend and I. He absolutely loved it! I did not put celery in my chowder because I don't like it and it was still tasty. I will definitely be making this again. It goes great with some homemade biscuits.

my kids and their friends really enjoyed this! i made a huge batch substituting vegetable broth for the chicken bouillon and water. we happily ate leftovers for the next two days.

I was looking for a yummy soup recipe for a rainy day we were having and this definately hit the spot! It only makes two servings so I also had it for lunch the next day! I added a very small red potato and extra pepper but it was fantastic! I also made cheddar biscuits to have on the side!

I changed this recipe quite a bit, combining it with 2 of my other favorite recipes. I used a big Idaho potato instead of a red potato, less fresh onion, no bacon, and lots of garlic powder and chopped dried onion. Also more pepper, and I used Kirkland process sliced cheese instead of the cheddar cheese. I use the Kirkland process sliced cheese in place of Velveeta (or in this case shredded cheese) in many recipes and it's so good!

Deeelish! We added in some sliced chicken & apple sausage to make this more of a "meal." I was amazed how thick and rich this chowder is despite being so quick and easy to make! My husband went back for seconds! :) I also agree with another reviewer: the bacon really didn't add that much to the chowder, but the sausage did. :)

I doubled every thing,lots of potato's,no granules and my own chicken broath,no flour becouse I have celiac,I froze about 2 pints of it.

speaking as someone who is concerned with celiac disease the addition of flour is unnecessary. the sugars and starches in the corn thicken the whole slop quite nicely. other than that a very good recipe.

Yum! Yum! Yum! This is such a great recipe. I always add a little more carrots and corn. We just like it that way. I also use olive oil to saute the veg if I don't have the bacon. Good way to reduce calories. I too add a little garlic and parsley. But it is perfect just the way the recipe says too!

my family has a very similar recipe but we use ham instead of bacon. There are NEVER any leftovers.

This is a delicious recipe. I substituted light cream for the milk and used turkey bacon. I also add about a 1/2 cup of diced red peppers. This is one of my favorites!

Thank you for all the great ideas. They really help since I don't like to combine so much fat withe carbs to keep my blood pressure down. I think I'll try it with skim milk and fat-free cheese and probably some Parmesan and the bacon bits & smoke flavoring. I'll let you know how it turns out. Thanks again kathy1012

473 calories come from milk and cheddar cheese, along with bacon. Try using 1% milk, half the cheddar and add some grated Parmesan in place, saute in olive oil and use bacon bits, smoke flavor, or Penzey's Northwood seasoning in its place. Recall that the recipe only makes 2 1-cup servings, so those are some concentrated calories! Crystal

The calories come from cheddar cheese and milk. Reduce the cheese and use some grated Parmesan or Romano, etc. in place, and 1% or skim milk and drop calories. Plus, the bacon doesn't help: could use olive oil to saute and bacon bits or smoke flavor. Crystal

Not bad, but a little bland. I think it needs more cheese or chicken bouillon. My family all liked it though.

Looking at the ingredients I can't figure out where 473 calories come from in one cup of this Autumn Chowder! Someone please help me. I would love to make this, but at 473 calories for one meal is a bit high!

delicious, we used 10% cream instead of milk, added basil and oregano, and used left over roasted red potatoes. for not liking soup, loved this! gourmet soup, well done.
