My Aunt Betty bakes many times each Christmas, but I look forward to these mouthwatering muffins the most. She gives me enough so that I can freeze and enjoy them for weeks.

Aunt Betty's Blueberry Muffins Recipe

Ingredients

  • 1/2 cup old-fashioned oats
  • 1/2 cup orange juice
  • 1 egg
  • 1/2 cup canola oil
  • 1/2 cup sugar
  • 1-1/2 cups all-purpose flour
  • 1-1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup fresh or frozen blueberries
  • TOPPING:
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon

Directions

  • In a large bowl, combine oats and orange juice; let stand for 5 minutes. Beat in the egg, oil and sugar until blended. Combine the flour, baking powder, salt and baking soda; stir into oat mixture just until moistened. Fold in blueberries.
  • Fill greased or paper-lined muffin cups two-thirds full. Combine topping ingredients; sprinkle over batter. Bake at 400° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: about 1 dozen.

Editor's Note: If using frozen blueberries, use without thawing to avoid discoloring the batter.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

did them just liek the recipe says and they were awesome ! A true muffin, crisp on the outside;moist, but light inside, not overly sweet. If you are looking for, cake in a cup, this is not your recipe. If you love a light muffin you will be pleased.

I'm always looking for a good homemade blueberry muffin recipe and I found it today! These are awesome! I am planning to take these on our next camping trip to share with my family! Great recipe, the orange juice adds a unique taste to them and the oatmeal keeps them moist, but not heavy or dry. Will definately make these again!

when i made this recipe the first time i had friends over and they went crazy over it and i became famous for makind the best blueberry muffin ever... it's just an amazing recipe... i bet nobody could say anything wrong about this one

Very good. I used 3/4 cups of sugar after reading the reviews and omitted the cinnamon for the top but added the sugar on top. Wish I had the large sugar but didn't. These are very good.

I like the fact that the batter is not overly sweet. It compliments the sugar/cinnamon topping. I added 1/2 Tbls. grated orange peel to the oat/oj mix to give it just a bit more of an orange flavor. Very tasty!

Healthy for sure, but not as sweet as other recipes. Be sure to use topping from recipe.

I was surprised at how much I liked this muffin. No butter or sour cream and some healthy goodness from orange juice and oats. Yummy!

this is a very good recipe and have made this recipe many times. you can also use a huckleberry instead of blueberry and come out very tasty as well.
