Asparagus Slaw with Onions Recipe

Ingredients

  • 1 lb fresh asparagus
  • 1 cup water
  • 2/3 lb fresh shredded cabbage, 4 cups
  • 1 cup shredded red cabbage
  • 1/3 cup shredded carrots
  • 1/4 cup chopped parsley
  • 1/4 red onion, thinly sliced
  • 2 tablespoons seasoned rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1/4 teaspoons white pepper

Directions

  • Trim asparagus.
  • In medium saucepan, over high, bring 1 inch water to boil.
  • Place asparagus in steamer basket, place basket into pan. Cover and steam 5 minutes.
  • Gently rinse with cool water, drain well. Set aside.
  • In large bowl, combine green cabbage, red cabbage, carrots, parsley, and onion. Add vinegar, sesame oil, and pepper. Toss gently to coat.
  • Divide asparagus spears between six salad plates. Top with cabbage mixture. Serve.
