Asparagus Guacamole Recipe

Ingredients

  • 1/2 lb fresh asparagus, trimmed, cut into 2-inch lengths
  • 2 cups water
  • 1/2 cup sour cream
  • 2-1/2 tablespoons dry mix guacamole seasoning
  • 1 medium tomato, seeded and chopped

Directions

  • In medium saucepan, over high heat, bring water to boil. Add asparagus, cook 3 - 5 minutes, or until tender.
  • Drain and rinse under cold water to cool completely. Pat dry.
  • In food processor, fitted with chopping blade, add asparagus and process 30 - 60 seconds, or until smooth.
  • Add sour cream and seasoning. Process 30 additional seconds, or until smooth.
  • Transfer to container. Add chopped tomato, mixing until evenly combined.
  • Cover and refrigerate 2 - 24 hours before serving.

Nutritional Facts 1 serving equals 49 calories, 3 g fat (2 g saturated fat), 252 mg sodium, 4 g carbohydrate, 1 g protein. Diabetic Exchanges: 1/2 vegetable, 1/2 fat.

My husband and I were happily surprised at this tasty recipe. Not only does it taste great but it is low in calories as well! Make sure the tomatoes are seeded and the asparagus is well dried other wise it gets a little thin but still good. We also ended up using a full packet of McCormick Guacamole seasoning packet.
