Asparagus, Apple and Chicken Salad

This cool, colorful salad is a palate-pleaser. Apples and asparagus seem an unlikely match, but they form a terrific trio with chicken. I make this salad quite often while asparagus is in season. — Nancy Horsburgh, Everett, Ontario

TIME: Prep/Total Time: 25 min.

Ingredients:

  • 1 cup cut fresh asparagus (1-inch pieces)
  • 2 tablespoons cider vinegar
  • 2 tablespoons vegetable oil
  • 2 teaspoons honey
  • 2 teaspoons minced fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup cubed cooked chicken
  • 1/2 cup diced red apple
  • 2 cups torn mixed greens

Directions:

Cook asparagus in a small amount of water until crisp-tender, about 3/4 minutes; drain and cool.
    In a bowl, combine the next six ingredients. Stir in the chicken, apple and asparagus; toss. Serve over greens. Yield: 3 servings.

    For my daughter's "April Showers" themed baby shower, I made this salad for the luncheon, and used the Umbrella Salad idea in this issue to make the umbrellas out of flour tortillas with red pepper handles. The salad is simple to prepare, very colorful and absolutely delicious! Plus, the umbrellas were too cute! Got lots of rave reviews on the salad - it was a definite success.
