Asian Turkey Lettuce Wraps Recipe

Ingredients

  • 1-1/4 pounds extra-lean ground turkey
  • 1 package (16 ounces) frozen stir-fry vegetable blend, thawed
  • 1/3 cup reduced-sodium teriyaki sauce
  • 1/4 cup hoisin sauce
  • 3 tablespoons reduced-fat creamy peanut butter
  • 2 tablespoons minced fresh gingerroot
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 3 garlic cloves, minced
  • 4 green onions, chopped
  • 10 Boston lettuce leaves
  • Additional hoisin sauce, optional

Directions

  • In a large nonstick skillet coated with cooking spray, cook turkey over medium heat until no longer pink.
  • Coarsely chop stir-fry vegetables; add to the pan. Stir in the teriyaki sauce, hoisin sauce, peanut butter, ginger, vinegar and oil. Stir-fry over medium-high heat for 5 minutes. Add garlic; cook 1 minute longer.
  • Remove from the heat; stir in onions. Place a scant 1/2 cup turkey mixture on each lettuce leaf; fold lettuce over filling. Serve with additional hoisin sauce if desired. Yield: 5 servings.

Nutritional Facts 2 wraps (calculated without additional hoisin sauce) equals 275 calories, 8 g fat (1 g saturated fat), 45 mg cholesterol, 686 mg sodium, 19 g carbohydrate, 4 g fiber, 34 g protein. Diabetic Exchanges: 3 lean meat, 1 starch, 1 vegetable, 1 fat.

Made these for lunch today and the family loved it!!! Used regular peanut butter so not as healthy calorie wise, but delicious! Will definitely make again!!!

Loved these--lower cal and healthier than similar recipes I've had in restaurants. Will make again, but will probably add more ginger, and maybe some chili oil to spice them up a bit, also maybe more hoisin. I made a separate peanut butter-based dipping sauce to go with, and it was an excellent flavor combination.

These wraps are delicious! Even my husband who hates vegetables loved them! I'll definitely be making them again very soon and probably using them for a dish at our wedding vow renewal since it will be Asian themed! Thanks for the great recipe!

Very good taste. Lean ground turkey can be bland but this reciped really jazzed it up. Kids ate them on tortillas, lettuce wraps for mom. Plan to keep making theses to use for my lunches instead of lunchmeat.

Addicting! I couldn't stop eating them. Just as good (if not better) as one's I've had at the Elephant Bar restaurant. I added some mango to the leftovers, and it gave it a neat flavor. (To me, mango can make almost anything taste delicious.) :)

This was delicious, and so very easy to make. I can't wait to make it again. The wraps were a bit messy with the lettuce ripping, so I wrapped them up in some whole wheat tortillas and called them Thai Tacos. Spinach tortillas would work great, too, I bet. And I had some left overs on a bed of baby spinach for lunch the next day... still great.

My husband declared these the best lettuce wraps that I've ever made (we've tried quite a few recipes). The flavor of the sauce was amazing. Will definitely make these again.  I will be sure to use the low-sodium teriyaki sauce the next time.  I only had regular, and the wraps came out a little bit salty for my taste.

 

Update - made these again, but with extra lean ground beef this time (what I had on hand) - even better!  :)
