Asian Style Gazpacho Soup
A great combination of ingredients makes this a light tasting soup made with tomatoes and fresh ginger. Brought to you by dLife®

Ingredients
6 medium tomatoes, seeded and finely chopped
2 cups low sodium chicken broth
1 teaspoon cooking sherry
2 tablespoons fresh cilantro, chopped
1 tablespoon low sodium soy sauce
4 scallions, white part only
4 thin slices fresh gingerroot
1/4 teaspoons chili sauce
2 medium limes
Directions
In medium saucepan over low heat, add tomatoes, broth, sherry,
cilantro, soy sauce, scallions, and ginger.
Simmer 20 minutes. Remove from heat and allow to cool.
Transfer soup to food processor or blender and puree until smooth.
Chill.
Before serving, stir in chili sauce.
Grate zest from one lime. Set aside.
Squeeze juice from both limes into soup. Stir well.
Ladle soup to chilled bowls and garnish with lime zest.
