Asian Mushroom Soup Recipe

Ingredients

  • 1 teaspoon vegetable oil
  • 1 tablespoon minced fresh gingerroot
  • 2 garlic cloves, minced
  • 5 cups low sodium vegetable broth
  • 8 ounces fresh portobello mushrooms, sliced
  • 1-1/2 tablespoons rice vinegar
  • 2 teaspoons sesame oil
  • Pinch salt, to taste
  • 2 tablespoons chopped green onion

Directions

  • In a wok or medium saucepan, heat vegetable oil over medium high.
  • Add ginger and garlic. Stir fry 30 seconds.
  • Lower heat to medium. Add mushrooms. Stir fry 2 minutes.
  • Add broth. Bring to boil. Reduce heat, cover and simmer 10 minutes.
  • Add rice wine and sesame oil. Stir well. Season to taste with salt.
  • Garnish with green onions. Serve.
