Asian Flounder Bake Recipe

Ingredients

  • 3 tablespoons light soy sauce
  • 2 tablespoons cooking sherry
  • 1 teaspoon sugar
  • 1 teaspoon minced fresh gingerroot
  • 1 teaspoon sesame oil
  • 10 ounces shredded carrots
  • 5 ounces fresh baby spinach
  • 20 ounces flounder fillet, cut into 4 - 5 ounce pieces
  • 1 green onion, thinly sliced
  • 1 tablespoon sesame seeds, toasted, optional

Directions

  • Preheat oven to 450°F.
  • In small bowl, whisk soy sauce, sherry, sugar, ginger, and sesame oil.
  • In 13-inch x 9-inch ceramic or glass baking dish, spread carrots evenly across bottom, place spinach over carrots, and top with flounder.
  • Pour soy sauce mixture evenly over flounder.
  • Bake until fish is opaque, 12 -14 minutes.
  • Move to serving plate, sprinkle with green onion and top with sesame seeds (optional).
