Ingredients

  • 1 pound lean ground beef (90% lean)
  • 2 packages (3 ounces each) Oriental ramen noodles, crumbled
  • 2-1/2 cups water
  • 2 cups frozen broccoli stir-fry vegetable blend
  • 1/4 teaspoon ground ginger
  • 2 tablespoons thinly sliced green onion

Directions

  • In a large skillet, cook beef over medium heat for 4-5 minutes or until no longer pink; drain. Add the contents of one ramen noodle flavoring packet; stir until dissolved. Remove beef and keep warm.
  • In the same skillet, combine the water, vegetables, ginger, noodles and contents of remaining flavoring packet. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally. Return beef to the pan; cook for 2-3 minutes or until heated through. Stir in onion. Yield: 4 servings.

Nutritional Analysis: 1-1/2 cups (prepared with lean ground beef and one noodle seasoning packet) equals 377 calories, 15 g fat (7 g saturated fat), 56 mg cholesterol, 624 mg sodium, 31 g carbohydrate, 3 g fiber, 27 g protein. Diabetic Exchanges: 3 lean meat, 2 starch, 1 fat.

This was an awesome recipe. I doubled the ingredients & used 1 shrimp top ramen & 1 beef & the two oriental ramen's. Turned out awesome, with a few splashes of soy sauce.

I have made this dish a couple of times and I agree that it lacks a little flavor, so I add in a few cloves of garlic which really helps give it a little "kick". It is so easy and very adaptable to your taste preferences.

I have made this several times and we thought it was pretty good! I make it as is, and then whoever wants to can add some soy sauce, more ginger, pepper flakes, etc. As q

This lacked flavor for us, I had to add stir fry sauce into it. Also it seem to come out soupy. Family didn't care for it will not make this again.

We really enjoyed this and will make it again. I used fresh broccoli, red pepper, onion, and mushrooms, instead of the stir fry mix but I'm sure it would be great either way. Kudos to the recipe author!

I used Chinese five spice instead of the seasoning mix in the ramen noodle packages. This was a family favorite.

I used very thin sliced beef in place of the hamburger, and I also used a teriyaki marinated on the beef, then I followed the rest of the recipe, it was tasty and easy. The Grandchildren loved it.
