Apricot Mousse Recipe

Ingredients

  • 12 fresh apricots, pitted and peeled
  • 2 tablespoons apricot flavored brandy
  • 1 cup frozen whipped topping, thawed
  • 1 teaspoon sweetener (sugar substitute)
  • 1/2 cup fresh strawberries or 6 small strawberries

Directions

  • In blender, puree apricots then transfer to medium mixing bowl.
  • Add brandy, whipped topping, and sugar substitute to apricots.
  • Cover and freeze 30 minutes until firm.
  • Remove from freezer and beat with whisk until smooth.
  • Divide mixture between 6 dessert dishes and top each with one strawberry.
