Applesauce Streusel Muffins
One day when I didn't have apples for my favorite dessert recipe, I used applesauce instead. I also put the batter in muffin cups so the men working cattle at our place could easily eat these treats in the field. Beverly Medalen, Willow City, North Dakota

Prep: 15 min. Bake: 20 min. + cooling
Ingredients
1 package yellow cake mix (regular size)
3/4 cup all-purpose flour
3 eggs
3/4 cup water
1/3 cup vegetable oil
FILLING:
3/4 cup applesauce
1/4 cup sugar
1 teaspoon ground cinnamon
STREUSEL TOPPING:
1/4 cup sugar
1 teaspoon all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon butter, softened
Directions
In a bowl, combine cake mix, flour, eggs, water and oil. Beat on low
speed for 30 seconds. Beat on medium for 2 minutes. Fill paper-lined
muffin cups one-third full. Combine the filling ingredients; place 2
tablespoonfuls in the center of each muffin cup. Top with remaining
batter. Combine the topping ingredients until crumbly; sprinkle over
batter.
Bake at 350° for 18-22 minutes or until a toothpick comes out
clean. Cool for 10 minutes before removing from pans to wire racks
to cool completely. Yield: 2 dozen.
