Applesauce Muffins Recipe

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups applesauce
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1 cup chopped walnuts, optional
  • Cinnamon-sugar, optional

Directions

  • In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Stir in applesauce. Combine the flour, baking soda and spices; stir into creamed mixture. Fold in nuts.
  • Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Sprinkle with cinnamon-sugar if desired. Yield: about 2 dozen.

Nutritional Facts 1 serving (1 each) equals 223 calories, 8 g fat (5 g saturated fat), 38 mg cholesterol, 136 mg sodium, 35 g carbohydrate, 1 g fiber, 3 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

My kids love these for breakfast or a quick snack. I keep a batch of these on hand all the time for those times when we're running for the kids and they need a quick snack.

I added a little buttermilk since batter seemed dry and they were a little heavy. But my family liked them. Next time I'll follow the recipe after reading that everyone else thought they were moist. I used unsweetened applesauce and they were plenty sweet. I cut the recipe in half and it made exactly 12 muffins. This recipe rates a place in my recipe box, absolute keeper. I like the idea of the streusel topping; will try that too.

I reduced the applesauce to 1-3/4 cup and added 1/4 cup apple butter. Also added a chopped apple. Loved the more intense apple flavor!

Delicious! Halved the recipe since it's just me and my husband and added 2/3 c of oats for some extra grains. Definite keeper!

This is a great muffin recipe. I made a mini version for my daughter's preschool. I substituted 2 c. wheat flour and, when I make them again, would reduce the sugar significantly (maybe to 1 c.). They were very sweet, even though I had used unsweetened applesauce. They are good enough that you could easily sneak some healthy ingredients in there - like ground flax, wheat germ, etc. I added a cinnamon streusel topping, per another reviewer. A cream cheese frosting would also be good and would offset the sweetness. Overall, very good and worth making again!

I made a double batch for my family of these muffins as well as a single batch of another kind. These dissapeared so much faster and were requested again instantly.

These muffins are moist and easy to make. The only change I made was that I used apple pie spice instead of the individual spices listed.

This recipie is a huge hit in my house! It was super easy to make, and my kids have already devoured half the loot!

I ran out of cupcake papers for the second batch, so made it into a bread instead. I had to cook it for about 20 minutes longer, but it turned out just as yummy!
