Big Batch Baked GoodsWe enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

These muffins are good, but nothing special. I would probably make them again to serve them with a meal. They have a subtle flavor, which is nice.

Yum yum this is the best recipe, I've made it with chunky applesauce also.Don't change a thing on this recipe. I live alone and I make this recipe and give them away and everyone just loves them. I fill the muffin tens really full and usually get about 18 muffins

These are the best muffins ever. Would not change anything. I added the cinnamon and sugar on top. Wonderful Wonderful. I filled the muffin tens full. Was great

These were very moist and fluffy. I used my home made apple butter so I cut the sugar in half. Since they are already so buttery, I served them with light cream cheese and cherry preserves.

wonderful recipe! I made half a batch and had to stop the kids from eating them all at once. It will replace my favorite muffin recipe.

Made these today,, as something for my grandchildren's breakfast before school.... love them... Next time I'll add raisins and no nuts...

Sooooo good!! I made a half batch and used mini muffin pans so they were bite sized, within 10min of coming out of the over my 2 young boys ate a dozen of them! Someone below suggested less sugar which I also did and they were still nice and sweet! Super easy, perfect for breakfast or to send to school! Only mistake I made was not making a full batch! :)
