Tip

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

These muffins are good, but nothing special. I would probably make them again to serve them with a meal. They have a subtle flavor, which is nice.

tender and delicious!

Yum yum this is the best recipe, I've made it with chunky applesauce also.

Don't change a thing on this recipe. I live alone and I make this recipe and give them away and everyone just loves them. I fill the muffin tens really full and usually get about 18 muffins

These are the best muffins ever. Would not change anything. I added the cinnamon and sugar on top. Wonderful Wonderful. I filled the muffin tens full. Was great

Nice flavor, but seemed rather heavy. Not fluffy as expected.

These were very moist and fluffy. I used my home made apple butter so I cut the sugar in half. Since they are already so buttery, I served them with light cream cheese and cherry preserves.

Made a lot of muffins! Nice and light. Would have liked to have tasted more apple flavor.

wonderful recipe! I made half a batch and had to stop the kids from eating them all at once. It will replace my favorite muffin recipe.

Made these today,, as something for my grandchildren's breakfast before school.... love them... Next time I'll add raisins and no nuts...

Sooooo good!! I made a half batch and used mini muffin pans so they were bite sized, within 10min of coming out of the over my 2 young boys ate a dozen of them! Someone below suggested less sugar which I also did and they were still nice and sweet! Super easy, perfect for breakfast or to send to school! Only mistake I made was not making a full batch! :)

My kids love these for breakfast or a quick snack. I keep a batch of these on hand all the time for those times when we're running for the kids and they need a quick snack.

I added a little buttermilk since batter seemed dry and they were a little heavy. But my family liked them. Next time I'll follow the recipe after reading that everyone else thought they were moist. I used unsweetened applesauce and they were plenty sweet. I cut the recipe in half and it made exactly 12 muffins. This recipe rates a place in my recipe box, absolute keeper. I like the idea of the streusel topping; will try that too.

I reduced the applesauce to 1-3/4 cup and added 1/4 cup apple butter. Also added a chopped apple. Loved the more intense apple flavor!

Delicious! Halved the recipe since it's just me and my husband and added 2/3 c of oats for some extra grains. Definite keeper!

Soooo yummy! My new favorite muffin! (I added raisins! Mmmm!)

This is a great muffin recipe. I made a mini version for my daughter's preschool. I substituted 2 c. wheat flour and, when I make them again, would reduce the sugar significantly (maybe to 1 c.). They were very sweet, even though I had used unsweetened applesauce. They are good enough that you could easily sneak some healthy ingredients in there - like ground flax, wheat germ, etc. I added a cinnamon streusel topping, per another reviewer. A cream cheese frosting would also be good and would offset the sweetness. Overall, very good and worth making again!

I made a double batch for my family of these muffins as well as a single batch of another kind. These dissapeared so much faster and were requested again instantly.

These muffins are moist and easy to make. The only change I made was that I used apple pie spice instead of the individual spices listed.

This recipie is a huge hit in my house! It was super easy to make, and my kids have already devoured half the loot!

I ran out of cupcake papers for the second batch, so made it into a bread instead. I had to cook it for about 20 minutes longer, but it turned out just as yummy!

Very moist and great flavor. I was worried that the batter was too dry, but they turned out great. I filled the muffin pan liners full and sprinkled the cinnamon sugar on top as soon as they were out of the oven--perfect!

I made these for our preschool snack and they were a hit. I left off the cinn/sugar dusting to avoid some of the mess. They were nice and moist and had a great flavor. Plus, very easy to make.

Muffins are moist and tasty with just enough spices to enhance the flavor. Served with Ham, Lentel, Barley soup - delish!

I added a cinnamon streusel top for some crunch, since I could not use the walnuts (nut allergy in family) -- came out great. Very nice, moist recipe.

used craisins instead of walnuts
