My grandmother passed this recipe down to me, and I'm eager to share it with my children. The down-home muffins are tender on the inside and have a crispy topping of oats, brown sugar and cinnamon. Big Batch Baked GoodsWe enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

Yummy, I used chunky homemade applesauce and left the topping off.

very good - fast, inexpensive and tasty - just how we like them. I also used a whole egg since I was only making the muffins. May also try adding some nutmeg and apple chunks in the future.

A great healthy breakfast treat! I used a whole egg and they turned out wonderful. We have several quarts of home made applesauce, what a good way to use it up!
