Apple and Cream Cheese Roll-Ups Recipe

Ingredients

  • 1 cup chopped apples
  • 1/3 cup unsweetened apple juice frozen concentrate, undiluted
  • 1/4 teaspoons ground cinnamon
  • Pinch ground nutmeg
  • 1/4 cup granulated SPLENDA® No Calorie Sweetener
  • 1/4 ounces cream cheese
  • 1 egg
  • 4 each phyllo pastry dough sheet, thawed
  • Cooking spray
  • 1/2 cup graham cracker crumbs, divided
  • 1/2 teaspoons ground cinnamon

Directions

  • Heat apples, apple juice concentrate, cinnamon, and nutmeg in a pot over medium-high heat until it boils.
  • Lower heat, place lid on pot, and simmer 5 minutes until almost all the liquid is absorbed. Let mixture cool to room temperature.
  • Using an electric mixer, beat Splenda and cream cheese until fluffy. Beat in egg.
  • Gently fold apple mixture into cream cheese, cover, and reserve.
  • Preheat oven to 350 degrees F. Spray a baking sheet with nonstick cooking spray and set aside.
  • Lay one sheet of phyllo on a large flat surface, with the remaining sheets covered so they do not dry out.
  • Coat phyllo with cooking spray and sprinkle evenly with 2 teaspoons graham cracker crumbs. Do the same to each sheet of phyllo.
  • Slice each phyllo sheet into 6 squares. Spoon 1 teaspoon of apple mixture onto each square.
  • Fold each square on the diagonal to cover apple mixture, forming triangles. Pinch the edges. Arrange on a baking sheet.
  • Sprinkle each apple triangle with cinnamon. Bake 10 minutes. Let cool.

Nutritional Facts 1 serving equals 73 calories, 1 g fat (trace saturated fat), 62 mg sodium, 14 g carbohydrate, 1 g protein. Diabetic Exchanges: 1/2 fruit, 1/4 starch.

The recipe yields 12 servings.

4 sheets of phyllo, cut each into 6 pieces to make 24 roll-ups.  

2 roll ups per serving is 12 servings.

Insufficient instructions-1 sheet of phyllo cut in6 pcs. makes 12 rollups- what to do with all of the sheets???
