Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 egg whites
  • 1 egg, lightly beaten
  • 2 cups fat-free milk
  • 2 tablespoons canola oil
  • 1 medium apple, peeled and chopped
  • 1/2 cup chopped walnuts
  • Maple syrup

Directions

  • In a large bowl, combine the flours, brown sugar, baking powder and
  • salt. Combine the egg whites, egg, milk and oil; add to dry
  • ingredients just until moistened. Fold in apple and walnuts.
  • Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking
  • spray; turn when bubbles form on top. Cook until the second side is
  • golden brown. Serve with syrup. Yield: 18 pancakes.
