Terribly banal. To add some much needed oomph, use 2 eggs, separated, whole or low fat milk, 1 tablespoon of apple pie spice, and grate that apple rather than chopping it. Doesn't hurt to toast the walnuts prior to chopping, either.

l made a few changes...l used 2 whole eggs. No need to peel the apple, just cut it into fine pieces and they were a little plain, but adding 1 tsp of ground cinnamon to the batter spices them up! Delicious!

I found this to be a very simple recipe. I tweak it a little. I used King Arthur white whole wheat, as it has a milder taste and I added 1 heaping tablespoon of apple pie spice. I also used 2 whole eggs, to avoid waste. Delicious! It tastes like an apple-walnut muffin now!

I personally didn't carea ll that much for these...I thought the recipe was somewhat tasteless. I even added a tsp of cinnamon and wasn't that impressed. I do like the idea of adding apple pie spice so IF I do decide to ever make again I will do that.

Have fixed these several times and hubby and I like them very much. They are a great change of pace from just plain old pancakes.
