Apple Puffs

3 cups all-purpose flour 1/2 cup sugar 1-1/2 teaspoons baking powder 2 teaspoons ground cinnamon 1 egg 1-1/2 cups milk 4 medium tart apples, peeled and chopped Confectioners' sugar Oil for deep-fat frying
In a large bowl, combine the flour, sugar, baking powder and cinnamon. In another bowl, beat the egg and milk; stir into dry ingredients just until moistened. Fold in apples. In a deep saucepan, electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by rounded tablespoonfuls into oil. Fry until golden brown on both sides. Drain on paper towels. Dust with confectioners' sugar. Serve warm.
Yield: about 4 dozen.
