To sweeten the school day, send along these soft sugar cookies with a homemade apple filling from Sharon Smith of Neosho, Missouri. "The sandwich cutouts were taste-tested by my grandchildren," she affirms. "They're certified kid-pleasers!" To save time you can use purchased pie filling for the centers. Or instead of "Painting" the tops with food coloring simply sprinkle them with cinnamon.

I made it with apple pie filling, then with sliced bananas. Delicious, big cookies!

I am the popular one in the office when I make these cookies. They are extremely easy to make. My apple cookie cutter is a 2 1/2 inch x 3 inch and the cookies are a bit big. I haven't had anyone complain because of it. I made frosting for these and used red food coloring for the apple part and green for the stem. I baking some up tonight and will be using red and green sugar sprinkle. I haven't decided whether I'll sprinkle it directly on the cookie prior to baking or frost and sprinkle. I think I'll try it both ways. NOTE: Make sure your baking ingredients are not expired. Expired cream of tartar, baking soda, flour, etc. can definitely affect the outcome of your cookies. Have fun and enjoy.
