Apple Peanut Butter Cookies Recipe

Ingredients

  • 1/2 cup shortening
  • 1/2 cup chunky peanut butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup grated peeled apple

Directions

  • In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the dry ingredients; gradually add to creamed mixture and mix well. Stir in apple.
  • Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Cool for 5 minutes before removing to wire racks. Yield: about 2-1/2 dozen.

I did what everyone else said about adding a whole apple (I used granny smith) and chop it, otherwise I followed the recipe. These were really good. Make sure you flatten them a little though before baking because otherwise they fall apart (but still tasty, lol). I'll definitely make them again.

I love this recipe! I've made it a few times now, I always use CHOPPED apple, not grated. If you are looking for more of that apple flavor simply use larger size chunks of apple. I think if you grate it you are not going to get any of that apple flavor. Besides that, these are a HUGE hit and delicious! If you're thinking about making them, please do ! :)

I had to try these based on all the favorable reviews, and the fact that my husband's favorite desserts are apple pie and anything with peanut butter in it. These are very, very good. I was sceptical about the cinnamon with the peanut butter but everything blends beautifully. I only gave it four stars because we prefer a chewy or crispy type cookie. I'm sure I'll make them again though, quick and easy. Follow the directions exactly and you'll be successful. I too used more apple than 1/2 cup; one large gala grated looked to be about one cup.

Soft cake like cookie. The apple, peanut butter or cinnamon do not standout as a flavour on their own but blend into a mild fall type flavour. Used half whole wheat And half white. Flour and full cup and shredded apple and they turned out great.

Followed the recipe as written and it came out beautifully. I used Jonathan apples, which are easy to come by this time of year. The flavor is amazing. My husband, who originally turned up his nose at the thought of an apple-peanut butter combo, was seen hovering over the cooling rack, waiting for seconds.

I adapted this recipe to a gluten free cookie and made a couple of other changes (added cinnamon and used butter instead of shortening) for flavor and these were delicious.

Apples and peanut butter are a wonderful flavor combination! My dogs have been enjoying apple and peanut butter flavored treats for years! I'm glad to have found a recipe that treats us humans to such goodness! A note on the apples; in my personal experience, there is no need to exactly measure 1/2 cup of apple. Just make sure the one you use is a decent size. Measured after shredding, one good-sized apple equals just a bit more that 1/2 cup. The little extra apple is great though. It gives the apple flavor just a little bit of help coming through. I've used a little more than 1/2 cup even, and the cookies never seemed to be "too apple-y" (Ha! can you even imagine such a thing anyways?). And for the shredding, simply use the bigger holes on a cheese grater (like the ones you would use for cheddar cheese). This size shred of apple makes their taste blend very evenly throughout the peanut butter. You also get more apple bits overall (over dicing) so the apple blends better throughout the cookie dough. Fabulously delicious cookies, though. These instantly became pretty much my favorite cookie ever. And as a last note, if you are out of or don't have chunky peanut butter, please go to the store and get some! Although regular peanut butter would lend the same flavor, the little peanut bits from the crunchy peanut butter give these cookies a wonderfully satisfying texture and are what makes these cookies as great as they are.

These cookies are wonderful. They hold up in mailing as well. I bake them and send them to my grand daughter in Minn. I have to make more than one batch at a time as they are very popular with my family.

Yummy! Like prior reviewers, I also used a whole cup of diced apple. I also experimented and added 1/2 cup of chopped peanuts, and about 1/4 cup of some dried cranberries. I substituted 1/2 cup of the flour with whole wheat flour, and put in a Tlbs of wheat germ. The cookies came out pefectly. I will make these again. Thank you for a wonderful recipe!

Diced up the apple quite small, used a Granny smith. I added mini chocolate chips to half the batch and these went twice as quick with my gang.

Made these for my family, and they loved them! I was out of peanut butter so I used almond butter instead--gave it a nice different flavor. If you're looking for an easy cookie recipe that's a little unique, I recommend this one! :)

This recipe was soooo good! Super moist, I especially loved the cinnamon in the cookies. The apples were nice touch, i used finely a finely chopped apple instead of grating it. My boyfriend loved them and enjoyed dipping them in a glass of milk. Yum! :))

These cookies are wonderful! I started with 1/4 c butter and 1/4 c shortening rather than all shortening, which worked beautifully. I also chopped the apples into tiny pieces rather than grated. I have definitely added this recipe to my book.

I love the combination of apples and peanut butter so I was excited to see discover this recipe. I decided to try the suggested method of using small chopped apple pieces instead of grated apple and I was happy with the texture and the flavor of the cookies. I will definitely make these again.

I liked these soft cookies, but thought they were too sweet. I will reduce the white sugar next time. I used a gala apple and chopped up about 3/4 C. I baked one batch 10 mins and they were pale and tended to fall apart. The next batched was baked 12-13 minutes and turned out a nice golden brown and had a better flavor and texture. I used real butter for the shortening. Yummo.

These were so good! I used bigger chunks of apple and found that pieces a little smaller than a chunk and bigger than grated works best. So... Chopped. :)

Great taste and texture! As others have noted, be careful with the time. I baked mine for 8 minutes and they came out great (I have a gas oven with a convection type fan)

I never would have thought of the combination of Peanut Butter and Apples, but it is quite a nice change from your ordinary chocolate chip or oatmeal raisin cookies. This cookie is a nice texture and has a little bit of both flavors in it but neither the apple or peanut butter are so overpowering that you can't taste one or the other. Very well done. Quick easy and pleasing. Thank you for the GREAT idea!

These cookies are fantastic! They're delightfully different. I didn't change a thing, except to bake them on parchment paper instead of greasing the sheets. Will definitely make again.

I made this recipe with a few tweaks! I doubled it and used a 50/50 combo of whole wheat and all purpose flours. I cut back about 1/2 on the salt and packed the grated apple into the measuring cup. I also added about 1 cup crushed peanuts and 2 1/2 cups mini dark chocolate chips! What can I say? I love chocolate and the combo of PB, apple and chocolate was too much to resist!! Rather than greasing the pans, I used parchment paper. The result was a moist flavourful cookie! The peanut butter is not overly strong so I may adjust the quantities a bit next time and the cinnamon added a nice dimension but does not overwhelm. Watch the baking time as mine didn't take as long to bake. Will definitely make again.

Yippee, how nice to find a new and DIFFERENT cookie recipe. I too added more than a half cup of apple- (I used honey crisp) basically the whole apple- no problem in the baking. I also had some tiny little peanut butter cups - about the size of choc chips. Oh my the taste is so YUMMY. A great fall taste!

Perfect mix between apples and pb! I put a little more than 1/2c of apples in and it cooked fine. Slight crunch on the outside, soft and cakey on the inside. My house loved them

Decided to try these as they seemed to be something different and not chocolate. They were a huge hit. Although I agree with Kate about possibly needing more apple, I would be afraid they would not cook the same. I stuck to the recipe, but packed my cup pretty full!

The flavor of these cookies is really good and the recipe came out just perfectly, crisp on the outside and soft inside. The only reason I will not make these again is that we are not fans of "cake" type cookies, we prefer a more dense, chewy type.

I made a double batch of these cookies and then shared them with my neighbors. They LOVED them! We LOVED them! I love apples so the cookies could stand a little bit more apple in the recipe, but still so delicious.

I made these cookies for my family and the cookies disappeared in a jiffy with them asking me to make more. I made them again doubling the recipe and took them to a dinner. The cookies disappeared in no time and I was being asked for the recipe by everyone present. They are delicious.

These cookies are delicious! I love peanut butter and apples so when I saw this recipe I had to try it. These are very soft and moist. Do not overbake! I was a litte skeptical about the cinnamon, but the taste is great. I really don't taste much of the apple and I did use an entire apple in my food processor which yielded almost a cup. Stick with the chunky pb as the nuts give it nice texture as well as taste. I got 3 dozen cookies out of this. Thanks for sharing.
