Apple Peanut Butter Cookies Recipe

Ingredients

  • 1/2 cup shortening
  • 1/2 cup chunky peanut butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup grated peeled apple

Directions

  • In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the dry ingredients; gradually add to creamed mixture and mix well. Stir in apple.
  • Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Cool for 5 minutes before removing to wire racks. Yield: about 2-1/2 dozen.

Diced up the apple quite small, used a Granny smith. I added mini chocolate chips to half the batch and these went twice as quick with my gang.

Made these for my family, and they loved them! I was out of peanut butter so I used almond butter instead--gave it a nice different flavor. If you're looking for an easy cookie recipe that's a little unique, I recommend this one! :)

This recipe was soooo good! Super moist, I especially loved the cinnamon in the cookies. The apples were nice touch, i used finely a finely chopped apple instead of grating it. My boyfriend loved them and enjoyed dipping them in a glass of milk. Yum! :))

These cookies are wonderful! I started with 1/4 c butter and 1/4 c shortening rather than all shortening, which worked beautifully. I also chopped the apples into tiny pieces rather than grated. I have definitely added this recipe to my book.

Next time I would finely chop the apples instead of grating them. Didn't seem to have quite enough apple flavor!

I love the combination of apples and peanut butter so I was excited to see discover this recipe. I decided to try the suggested method of using small chopped apple pieces instead of grated apple and I was happy with the texture and the flavor of the cookies. I will definitely make these again.
