Apple Pancakes

Ingredients:

  • 2 cups reduced-fat biscuit/baking mix
  • Sugar substitute equivalent to 2 teaspoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup egg substitute
  • 1 cup fat-free milk
  • 2 teaspoons vanilla extract
  • 1 tart apple, peeled and grated

Directions:

In a bowl, combine the biscuit mix, sweetener, baking powder, cinnamon and salt. In another bowl, combine the egg substitute, milk and vanilla; stir into dry ingredients. Fold in apple.
    Pour batter by 1/4 cupfuls onto a hot skillet coated with cooking spray; turn when bubbles form on top. Cook until second side is golden brown. Yield: 10 servings.
