Apple Onion Soup Recipe

Ingredients

  • 1 tablespoon unsalted butter
  • 1 lb medium onions, thinly sliced
  • 2 medium tart apples, peeled and chopped
  • 6 cups low sodium chicken broth
  • 1/2 teaspoons ground thyme
  • Pinch salt and pepper, to taste
  • 1/3 cup shredded Swiss cheese

Directions

  • In large pot, over medium heat, melt butter.
  • Add onions and apples.
  • Cook, uncovered, until apples and onions are tender, stirring occasionally.
  • Add broth and thyme. Partially cover, simmer 20 minutes, stirring occasionally. Add salt and pepper to taste.
  • In 6 serving bowls, add 1 tablespoon cheese. Ladle hot soup over cheese, serve.
