Ingredients

  • 2 egg whites
  • 1/4 cup fat-free milk
  • 2 tablespoons canola oil
  • 1/2 teaspoon vanilla extract
  • 2 cups quick-cooking oats
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 cup chopped peeled apple

Directions

  • In a large bowl, beat the egg whites, milk, oil and vanilla. Combine the oats, flour, sugars, cinnamon, baking powder, salt and nutmeg; gradually add to egg white mixture and mix well. Stir in apple.
  • Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 350° for 10-12 minutes or until bottoms are lightly browned. Remove to wire racks. Yield: about 2-1/2 dozen.

Nutrition Facts: 1 cookie equals 51 calories, 1 g fat (trace saturated fat), trace cholesterol, 48 mg sodium, 9 g carbohydrate, 1 g fiber, 1 g protein. Diabetic Exchange: 1/2 starch.
