Apple Crumble

While visiting friends in New Zealand, I watched this dessert being made. Back at home, I came up with my own version. It’s great with vanilla ice cream or fresh whipped cream. —Carol Simpkins, Santa Cruz, California

INGREDIENTS

  • 8 sheets phyllo dough (14 inches x 9 inches)
  • Butter-flavored cooking spray
  • 1/2 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 4 medium tart apples, peeled and sliced
  • TOPPING:
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup soft whole wheat bread crumbs
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup cold butter
  • 1/4 cup slivered almonds

DIRECTIONS

Cut phyllo sheets in half; spritz with butter-flavored spray. Layer phyllo, sprayed side up, in a greased 8-in. square baking dish. In a large bowl, combine the brown sugar, flour, ginger and cinnamon; add apples and toss to coat. Spoon over phyllo dough.
    In a bowl, combine the flour, brown sugar, bread crumbs, ginger and cinnamon; cut in butter until mixture resembles coarse crumbs. Add almonds; sprinkle over apple mixture. Bake at 350° for 40-45 minutes or until filling is bubbly and topping is golden. Cool for 10 minutes before serving. Yield: 9 servings.
