Apple-Cinnamon Shortcakes Recipe

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons plus 2 teaspoons sugar, divided
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup heavy whipping cream
  • 1/2 cup plus 4 teaspoons melted butter, divided
  • FILLING:
  • 1/4 cup butter, cubed
  • 4 large tart apples, peeled and sliced
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg

Directions

  • In a large bowl, combine the flour, 2 tablespoons sugar, baking powder, cinnamon and salt. In a small bowl, combine cream and 1/2 cup butter; stir into dry ingredients just until moistened.
  • Drop dough by 1/4 cupfuls 2 in. apart onto a greased baking sheet. Brush with remaining butter; sprinkle with remaining sugar. Bake at 375° for 18-20 minutes or until golden brown. Cool slightly.
  • For filling, in a large skillet, melt butter. Add apples; saute until tender. Stir in the brown sugar, cinnamon and nutmeg. Gently split warm shortcakes in half horizontally. Top bottom halves with apple mixture; replace tops. Serve immediately. Yield: 8 servings.

Nutritional Facts 1 shortcake with 1/3 cup filling equals 496 calories, 30 g fat (19 g saturated fat), 91 mg cholesterol, 449 mg sodium, 54 g carbohydrate, 2 g fiber, 4 g protein.

I agree with Mortinka. I want to know what to expect when I make a recipe not hear about how I shouldn't be making it because it's unhealthy or that "it sounds good" because that's why I plan on making it. Enough ranting, I did make this and it was average. The shortcakes cooked up fine, I got nine using 1/4 c. to measure. I used Braeburn apples and they took FOREVER to soften and were sliced very thinly. I finally gave up and threw a lid on the pan and steamed them. Flavor was good but nothing overly special.

Can't understand why people have to put their 2 cents worth in without making the recipe.

I made this exactly as listed and it was very, very good.

The shortcake is soft, moist and good and the apple filling is very good.

So VERY, VERY GOOD :>)

I made this over the weekend as written for my daughter and 2 granddaughters. They loved it! The recipe was passed on to her. Thank you. Easy and a great dessert.

Really? Not one person who has rated this recipe has tried it! Recipies should not be rated if you haven't made them. The rating is not supposed to be based on whether or not it sounds good to you & it's definately not supposed to be based on the fat or sugar content. If it's not healthy enough for you, go on to another recipe insteading of complaining & giving it a bad rating. Also, a recipe shouldn't be rated if you change all the ingredients. When I read a review, I want to hear from someone who's made the recipe as written, otherwise it's not a fair & accurate review.

This sounds delicious. Apples and cinnamon are always a winning combination. If you are counting calories, just don't make this. Am always amazed at the negative responses to high calorie recipes.

Sounds very good, and I haven't tried it yet. I would think that milk would work in the shortcakes rather than cream, just to reduce calories. Or, just make the apple part and enjoy it alone.

It's common knowledge that you can make desserts lighter and still have flavor. There is no reason a person can't have a healthy diet and enjoy desserts and snacks.

Reduced -fat evaporated milk is a good choice.

For sewseitz ~ they make a fat-free half and half, now. I would do a combination of that and whole or 2% milk (because you need some fat). Or try a reduced fat evaporated milk.

oh sorry, I said to use cool whip. I hadn't read the recipe through. I thought she meant to use as a topping. I hadn't realized the heavy cream went into the recipe. You could try half and half and see how that works for you, but if you are concerned about calories and fat don't make this recipe.

We do a very similar thing at the Sr. Meals center (1,000 servings at a time) but use a Bisquick type product. There are no left-overs. :>)
