Apple-Cabbage Strudel Recipe

Ingredients

  • Cooking spray
  • 1/2 cup sliced white onion
  • 2 garlic cloves, minced
  • 3 cups chopped red cabbage
  • 1/3 cup apple cider or juice
  • 1-1/2 medium apples, peeled and chopped
  • 1/4 each seedless raisins
  • 1-1/2 teaspoons curry powder
  • Pinch salt, to taste
  • Pinch black pepper, to taste
  • 8 sheet phyllo pastry dough, thawed

Directions

  • Preheat oven to 400°F.
  • Repeat steps 7 - 9 with remaining phyllo sheets and cabbage filling.
  • Heavily coat tops of strudels with cooking spray.
  • Bake 15 minutes or until lightly browned. Remove from oven and cool. Slice into 1 inch pieces.
  • Coat large skillet with cooking spray. Heat over medium. Add onion and garlic. Cook 5 minutes, until soft.
  • Add cabbage and apple cider. Cover and continue cooking 5 minutes, until cabbage is wilted.
  • Add apples, raisins, and curry powder. Cook, uncovered, 5 to 8 minutes. Apples will be soft but still crisp and most liquid evaporated.
  • Sprinkle with salt and pepper.
  • Remove from heat and let cool.
  • Spread kitchen towel on counter. Place 1 sheet of phyllo on towel. Coat with cooking spray. Layer second sheet of phyllo and coat with cooking spray. Repeat until 4 sheets are layered.
  • Spread half of cabbage filling along short edge of phyllo, 1 inch from edge. Roll phyllo from short end with filling, tucking in edges.
  • Coat baking sheet with cooking spray. Move strudel to baking sheet, seam side down.
  • Repeat steps 7 - 9 with remaining phyllo sheets and cabbage filling.
  • Heavily coat tops of strudels with cooking spray.
  • Bake 15 minutes or until lightly browned. Remove from oven and cool. Slice into 1 inch pieces.
